DRY-CURED BACON – GREAT TASTE AWARD WINNER

‘Just like it used to taste’!
All our bacon is dry-cured using a carefully blended mixture of salts and sugars, which are hand-rubbed into the meat. Available as back, middle and streaky, plain or smoked over oak chippings, all have a wonderful taste and texture. Available in 200g packs, 2.5kg catering backs or whole bacons.

 

 

SPECIALITY SAUSAGES – GREAT TASTE AWARD WINNER

Hand made sausages using only the best cuts of pork and carefully chosen ingredients, including specially selected seasonings, spices and locally grown herbs and vegetables. There is a wide range of flavours to suit all tastes from traditional breakfast sausage to the slightly more spicy!

Gammons anbd Cooked Hams

As with the bacon, the meat is cured using a special mixture of salts and sugars and then allowed time to mature and for the flavours to develop – so whether you choose gammons to cook yourself, or our delicious cooked ham, steeped in honey and slowly boiled or roasted to perfection – you will be guaranteed a taste sensation. Gammons are available as whole legs, joints or steaks, and the cooked hams in whole or half joints or ready sliced.

 

FRESH PORK

Our policies on rearing our pigs in such a natural, free- range environment are well rewarded when tasting our fresh pork, this coupled with experienced and skilful preparation results in succulent and tasty meat in a whole range of cuts.

  BUTTERCROSS SPECIALITIES

Not to be outdone by the continentals, we also produce a Shropshire version of PANCETTA – our own belly bacon, smothered in herbs, then air-dried and smoked over oak chippings.

 

 

BLACK PUDDING

Made to our own time honoured and unique recipe, packed with flavour and goodness this old favourite is enjoying a renaissance, currently being particularly popular as a starter in many restaurants

 

 

ABERDEEN ANGUS BEEF

3 Week matured Aberdeen Angus beef from home reared pedigree cattle is available exclusively in our own butcheries (Shiffords Grange Farm and Weston Park). Available in a range of cuts the meat is beautifully succulent with a true flavour.

WESTON PARK LAMB

Reared with care on the Weston Park estate the lamb is available in a range of cuts and never disappoints with its delicious full flavour.

FREE-RANGE POULTRY

Although we don't rear the poultry ourselves we demand that our producers have the same ethos with regard to welfare of their animals and as such are pleased to supply delicious free range chickens, chicken fillets and portions.

NB Whilst we have limited supplies of homereared Angus Beef and Weston Park lamb, we are able to source locally produced, high quality beef, lamb and poultry for our catering customers..
